Aunt Bobbie's Green Rice

  • 2 cups cooked rice
  • 1 cup grated sharp cheese
  • 1/4 cup melted butter
  • 2 TBSP chopped onion
  • 1 cup chopped parsley
  • 3 egg yolks (beaten)
  • 3 egg whites (beaten stiff)

Combine all ingredients except egg whites. Then fold in egg whites.
Bake at 350 in greased casserole for 25 minutes.
Salt and pepper to taste.


Tuna Topping

  • 1 can cream of mushroom soup (undiluted)
  • 1 can of cream of celery soup (undiluted) 1 large can of white tuna
  • 1 small can of mushrooms
  • 1 small can of pimientos

Heat and keep separate.
Serve over individual portions of green rice.
