Aunt May's Chicken
- 6 Chicken Breasts (boneless
& skinless) pound flat. Brush with oil and salt &
pepper
- 1 1/2 slices white bread
soaked in half and half
- Very small onion chopped
fine
- 5 water chestnuts chopped
- 1/4 lb. ground veal
- 1/4 lb. ground pork
- 1/4 lb. ground beef
- 1 egg beat
- 2 tsp. soy sauce
- Dash cayenne & dash accent

Mix all ingredients
except chicken and divide among the 6 chicken breasts
Roll each chicken around the stuffing and tie.
Bake in a greased shallow baking dish @ 350 for 50 minutes.
Then brush with honey and sesame seeds and bake for 15 minutes
more @ 400.
Serve on a slice of pineapple. |
