Jen's Chicken Tetrazzini

  • 2 cups diced cooked chicken (3 half breasts)
  • 2 cups velonti sauce
  • 1 cup regular spaghetti or 1 1/2 cups angel hair spaghetti
  • 1 small can sliced mushrooms
  • Parmesan cheese

Cook spaghetti, drain and combine with sauce, mushrooms and chicken.
Pour into 8x12 or 9x13 casserole.
Sprinkle top with Parmesan cheese.

Cover with foil and bake @ 350 degrees for 45 minutes.


Velonti Sauce

  • 4 Tablespoons butter
  • 4 Tablespoons flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups chicken broth
  • 1/2 cup Parmesan cheese

Melt butter and add flour, salt and pepper. Blend well, then add chicken broth and cheese.
Cook, stirring until sauce thickens.
