Mary Jane's Chicken & Fruit Salad

  • 2 cups diced, cooked chicken breast
  • 1 can pineapple chunks (drained)
  • 1/3 cup peanuts or walnuts
  • 1 cup red or green seedless grapes (halved)
  • 1/2 cup chopped celery
  • pinch of tarragon (optional)
  • 1/2 cup light mayonnaise
  • 1 tablespoon each pineapple & lemon juice

Mix chicken, pineapple, grapes, celery and nuts.
Add tarragon (optional).
In another bowl, mix lemon juice, pineapple juice and mayonnaise.
Fold into mixture.
