Mary Jane's Chicken &
Fruit Salad
- 2 cups diced, cooked
chicken breast
- 1 can pineapple chunks (drained)
- 1/3 cup peanuts or walnuts
- 1 cup red or green seedless
grapes (halved)
- 1/2 cup chopped celery
- pinch of tarragon (optional)
- 1/2 cup light mayonnaise
- 1 tablespoon each pineapple
& lemon juice

Mix chicken,
pineapple, grapes, celery and nuts.
Add tarragon (optional).
In another bowl, mix lemon juice, pineapple
juice and mayonnaise.
Fold into mixture. |
