Linda's Grilled Skewered Potatoes


  • 2 lbs red potatoes, quartered
  • 1/2 C water
  • 1/2 C Miracle Whip Salad Dressing
  • 1/4 C chicken broth
  • 2 tsp dried oregano leaves
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

Place potatoes and water in 2 qt casserole

Microwave on High 12-15 minutes, stirring after 8 minutes

Drain, then Mix remaining ingredients

Stir in potatoes; cover, then Refrigerate 1 hour

Drain (reserving salad dressing mixture)

Arrange potatoes on skewers, Place on grill over hot coals

Grill, covered for 4 minutes

Rotate skewers, brush with reserved salad dressing mixture

Continue grilling 4 minutes
