Skillet BBQ Chicken & Rice


  • 1 lb boneless skinless chicken breasts, cut into strips
  • 2 T oil
  • 1 1/2 C BBQ sauce
  • 1 C water
  • 1 can (11 oz) whole kernel corn, drained
  • 1 sm green pepper chopped
  • 2 C Minute Rice uncooked

Brown chicken in hot oil in large skillet on medium-high heat
Stir in BBQ sauce, water, corn & pepper, bring to boil
Reduce heat; cover and simmer for 5 minutes
Stir in rice, cover. Remove from heat; let stand 5 minutes
